Prep Time: 30 minutes Bake Time: 60–70 minutes Chill Time: At least 6 hours Servings: 10–12 Difficulty: Intermediate Cuisine: Southwestern-Inspired

Ingredients

Cinnamon-Pecan Crust

  • 1½ cups graham cracker crumbs

  • ½ cup finely chopped toasted pecans

  • ⅓ cup melted unsalted butter

  • ¼ cup brown sugar

  • 1 teaspoon ground cinnamon

  • Pinch of salt

Prickly Pear Cheesecake Filling

  • 24 ounces cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs, room temperature

  • ¾ cup sour cream

  • 2 teaspoons vanilla extract

  • ¼ cup prickly pear syrup or reduced prickly pear purée

  • 1 tablespoon fresh lime juice

  • 1 tablespoon cornstarch

Mexican Chocolate Ganache

  • 6 ounces dark chocolate, finely chopped

  • ½ cup heavy whipping cream

  • ½ teaspoon ground cinnamon

  • Pinch of cayenne pepper (optional)

  • ½ teaspoon vanilla extract

Garnish

  • Candied pecans

  • Fresh berries

  • Edible flowers

  • Prickly pear syrup for drizzling

  • Chocolate curls

Preparation

Step 1 — Prepare the Cinnamon-Pecan Crust

Preheat oven to 325°F.

Combine graham cracker crumbs, toasted pecans, brown sugar, cinnamon, and salt.

Stir in melted butter until the mixture resembles damp sand. Press firmly into the bottom of a greased 9-inch springform pan. Bake for 10 minutes. Remove and cool.

Step 2 — Prepare the Cheesecake Filling

Beat softened cream cheese and sugar until smooth. Add sour cream, vanilla, lime juice, and cornstarch. Mix until combined. Add eggs one at a time on low speed, mixing just until incorporated. Avoid overmixing.

Step 3 — Create the Prickly Pear Swirl

Pour approximately two-thirds of the cheesecake filling over the prepared crust.

Mix the prickly pear syrup into the remaining filling. Spoon the pink prickly pear mixture over the vanilla filling. Use a butter knife or skewer to gently swirl the colors together.

Step 4 — Bake the Cheesecake

Wrap the outside of the springform pan securely in heavy-duty foil.

Place in a larger roasting pan and add approximately 1 inch of hot water.

Bake at 325°F for 60–70 minutes, until the edges are set and the center still has a slight wobble. Turn off the oven, crack the door, and let the cheesecake cool inside for 45–60 minutes. Remove and cool completely before refrigerating for at least 6 hours.

Step 5 — Prepare the Mexican Chocolate Ganache

Heat heavy cream until steaming but not boiling. Pour over chopped dark chocolate. Let stand for 2 minutes, then stir until smooth. Add cinnamon, vanilla, and optional cayenne pepper. Allow to cool slightly.

Step 6 — Finish and Garnish

Remove the chilled cheesecake from the springform pan.

Pour ganache over the top, allowing some to drip gently down the sides.

Decorate with candied pecans, berries, edible flowers, and chocolate curls.

Drizzle with prickly pear syrup just before serving.

Chef Tim's Dessert Tips

Intensify the Prickly Pear Flavor: Use a concentrated prickly pear purée or reduced syrup for a more pronounced fruit flavor.

Perfect Cheesecake Texture: Use room-temperature ingredients and avoid overbeating after adding the eggs.

Beautiful Presentation: For clean slices, dip a sharp knife in hot water and wipe between cuts.

Southwestern Heat: Add a tiny pinch of cayenne to the Mexican chocolate ganache for a subtle warming finish.
