Preparation
Step 1 — Season the Shrimp
In a mixing bowl, combine olive oil, lime juice, minced garlic, honey, and Timoteo’s Sonoran Spice Rub. Add the shrimp and toss until evenly coated. Refrigerate for 10–15 minutes while preparing the salsa.
Step 2 — Prepare the Roasted Corn Salsa
Heat a cast-iron skillet or grill pan over medium-high heat.
Add olive oil and corn kernels. Cook for 5–7 minutes, stirring occasionally, until the corn develops golden-brown charred spots. Transfer to a bowl and allow to cool slightly.
Add black beans, red bell pepper, red onion, jalapeño, cilantro, lime juice, and Timoteo’s Tajin Seasoning. Mix well and refrigerate until ready to serve.
Step 3 — Make the Avocado Crema
Combine avocado, sour cream, lime juice, and garlic in a blender or food processor.
Blend until smooth and creamy, adding water one tablespoon at a time until the desired consistency is reached. Season lightly with salt if needed.
Step 4 — How to Make Sonoran Grilled Shrimp Tacos
Preheat the grill to medium-high heat, approximately 400–450°F.
Place shrimp on lightly oiled grill grates or skewers. Grill for approximately 2–3 minutes per side, depending on size, until the shrimp are opaque, firm, and reach 145°F internally.
Remove from the grill and squeeze fresh lime juice over the shrimp.
Step 5 — Warm the Tortillas
Place tortillas directly on the grill for approximately 15–30 seconds per side until warmed and lightly charred. Keep warm in a clean kitchen towel.
Step 6 — Assemble the Tacos
Place grilled shrimp inside each warm tortilla. Top with roasted corn salsa, avocado crema, pickled red onions, sliced radishes, and fresh cilantro. Finish with a squeeze of lime and a light sprinkle of Timoteo’s Tajin Seasoning. Serve immediately.
Chef Tim’s Tips
For Extra Smoky Flavor: Grill the corn directly on the cob before cutting off the kernels.
For More Heat: Add finely diced serrano peppers or a pinch of Timoteo’s Black Scorpion Rub to the shrimp marinade.
For a Beautiful Presentation: Serve the tacos on a wooden platter with lime wedges, fresh cilantro, and avocado crema drizzled across the top.
Make It a Bowl: Skip the tortillas and serve the shrimp over cilantro-lime rice with roasted corn salsa.
