Ingredients

For the Pork Belly

  • 3 pounds skinless pork belly

  • 3 tablespoons Timoteo’s Texas Dry Rub

  • 2 tablespoons brown sugar

  • 1 tablespoon olive oil

  • ½ teaspoon smoked paprika

  • ½ teaspoon freshly ground black pepper

For the Sweet Sonoran Glaze

  • 1 cup Timoteo’s Sweet Sonoran Mexican Beer Prickly Pear BBQ Sauce

  • 3 tablespoons honey

  • 2 tablespoons unsalted butter

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons brown sugar

  • 1 tablespoon fresh lime juice

Optional Garnish

  • Thinly sliced green onions

  • Fresh cilantro

  • Pickled jalapeños

  • Lime wedges

Preparation

Step 1 — Prepare the Pork Belly

Trim any excess skin or hard fat from the pork belly.

Cut the meat into approximately 1½-inch cubes. Place the cubes in a large mixing bowl and toss with olive oil. Add Timoteo’s Texas Dry Rub, brown sugar, smoked paprika, and black pepper. Mix thoroughly until every piece is evenly coated.

Step 2 — Prepare the Smoker

Preheat your smoker to 250°F.

For authentic Southwestern barbecue flavor, use pecan, oak, or mesquite wood. Use mesquite sparingly to avoid overpowering the pork. Arrange the seasoned pork belly cubes on a wire rack or directly on the smoker grates, leaving space between each piece.

Step 3 — Smoke Until Tender

Smoke the pork belly for approximately 2½–3 hours, until the exterior develops a beautiful mahogany bark. The cubes should feel tender but still hold their shape.

Step 4 — Make the Sweet Sonoran BBQ Glaze

In a saucepan over medium-low heat, combine Timoteo’s Sweet Sonoran BBQ Sauce, honey, butter, apple cider vinegar, brown sugar, and lime juice.

Stir until the butter melts and the glaze becomes smooth.

Simmer gently for 3–5 minutes.

Step 5 — Glaze the Burnt Ends

Transfer the smoked pork belly cubes to a disposable aluminum pan.

Pour the warm Sweet Sonoran glaze over the pork and gently toss until completely coated. Cover tightly with foil and return to the smoker for approximately 30–45 minutes, until very tender.

Step 6 — Caramelize the Glaze

Remove the foil and continue smoking for another 15–30 minutes.

Stir occasionally until the sauce thickens and forms a sticky, glossy coating.

The pork should be tender, with an internal temperature often around 195–205°F for the desired texture.

Step 7 — Serve

Transfer the glazed pork belly burnt ends to a serving platter.

Garnish with green onions, cilantro, or pickled jalapeños.

Serve hot with extra Sweet Sonoran BBQ Sauce on the side.

Chef Tim’s BBQ Tips

Choose the Right Pork Belly: Look for evenly marbled, skinless pork belly with a good balance of meat and fat.

Don't Rush the Smoke: Low-and-slow cooking develops the smoky bark and tender texture that make burnt ends unforgettable.

Balance Sweetness with Acidity: The apple cider vinegar and lime juice help balance the richness of the pork belly and the sweetness of the glaze.

Make It Spicy: Add a small amount of Timoteo’s Black Scorpion Rub to the glaze for extra heat.

Serve Them Three Ways: Enjoy as an appetizer, pile into toasted brioche sliders with slaw, or serve over creamy Southwestern mac and cheese.
