Ingredients

Sonoran-Spiced Chicken Wings

  • 4 pounds chicken wings, separated into flats and drumettes

  • 2 tablespoons Timoteo's Desert Rattler Rub

  • 1 tablespoon Timoteo's Sonoran Spice Rub

  • 1 tablespoon aluminum-free baking powder (not baking soda), for oven-crisped wings

  • 1 teaspoon smoked paprika

  • 1 teaspoon granulated garlic

  • 1 tablespoon olive oil, for grilling if needed

  • Freshly ground black pepper, to taste

Signature Mango Habanero Glaze

  • 1 cup Timoteo's Mango Habanero BBQ Sauce

  • ½ cup fresh ripe mango purée

  • 2 tablespoons honey

  • 2 tablespoons fresh lime juice

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon fresh lime zest

  • 1 tablespoon unsalted butter

  • 1 small garlic clove, finely minced

  • ½ habanero pepper, finely minced (optional, for extra heat)

Charred Lime Crema

  • ½ cup Mexican crema or sour cream

  • 2 tablespoons mayonnaise

  • 1 fresh lime, halved

  • 1 tablespoon chopped fresh cilantro

  • ½ teaspoon garlic powder

  • Salt, to taste

Garnishes

  • Fresh mango, finely diced

  • Fresh cilantro

  • Thinly sliced jalapeños

  • Charred lime wedges

  • Thinly sliced green onions

Preparation

Step 1 — Prepare the Wings

Pat the chicken wings thoroughly dry with paper towels.

Combine Timoteo's Desert Rattler Rub, Sonoran Spice Rub, smoked paprika, garlic, and black pepper. For oven cooking, mix in the baking powder to help develop crisp skin.

Coat the wings evenly with the seasoning mixture. Arrange on a wire rack over a baking sheet and refrigerate uncovered for at least 30 minutes, or overnight for the crispiest skin.

Step 2 — Prepare the Grill or Oven

Oven Method: Preheat the oven to 425°F. Arrange the wings on a wire rack over a lined baking sheet.

Grill Method: Preheat the grill to 375–400°F and set up an indirect-heat cooking zone. Lightly oil the wings if needed. For additional Southwestern flavor, add a small amount of mesquite or oak smoke.

Step 3 — Cook Until Crispy

Roast the wings for approximately 40–50 minutes, turning halfway through, or grill over indirect heat for approximately 35–45 minutes. For a crisp finish on the grill, briefly move the wings over direct heat. Cook until the thickest portion reaches at least 165°F internally. For a more tender wing texture, 175–185°F is often preferred.

Step 4 — Make the Mango Habanero Glaze

In a small saucepan, combine Timoteo's Mango Habanero BBQ Sauce, mango purée, honey, lime juice, apple cider vinegar, garlic, and optional minced habanero.

Simmer gently for approximately 6–10 minutes, stirring frequently, until glossy and slightly thickened. Remove from the heat and stir in the butter and lime zest. Taste and adjust the sweetness, tanginess, and heat.

Chef's Tip: Because Timoteo's Mango Habanero BBQ Sauce already delivers sweetness and heat, start with the listed glaze ingredients and adjust gradually. Additional habanero is optional.

Step 5 — Prepare the Charred Lime Crema

Place the lime halves cut-side down on a hot grill or dry skillet. Cook for approximately 2–3 minutes until lightly charred. Allow to cool, then squeeze approximately 1 tablespoon of juice into a small bowl. Whisk together the lime juice, Mexican crema, mayonnaise, cilantro, garlic powder, and salt. Refrigerate until ready to serve.

Step 6 — Glaze the Wings

Transfer the fully cooked wings to a large mixing bowl. Add enough warm mango habanero glaze to coat evenly. Toss gently. For a caramelized finish, return the glazed wings to the oven or indirect grill heat for approximately 3–5 minutes. Watch carefully because the natural sugars in mango, honey, and BBQ sauce can burn quickly.

Step 7 — Plate Southwestern Style

Arrange the wings on a large rustic platter or cast-iron serving tray.

Drizzle with a little additional glaze. Garnish with diced fresh mango, cilantro, sliced jalapeños, and charred lime wedges. Serve with chilled charred lime crema for dipping.

Chef Tim's Southwestern Wing Tips

Use Desert Rattler Rub: Your award-winning seasoning creates the bold foundation for these wings.

Let the Mango Shine: Fresh mango purée enhances the fruity flavor of Timoteo's Mango Habanero BBQ Sauce.

Control the Heat: Skip the additional habanero for a milder version or add more for serious heat lovers.

Use Mesquite Sparingly: A little smoke adds authentic Southwestern character without overpowering the mango.

Glaze at the End: Adding the glaze during the final minutes prevents the sugars from burning.

Keep the Wings Crispy: Dry the skin thoroughly before seasoning and avoid overcrowding the pan.

Serve with Charred Lime Crema: The cool, tangy dipping sauce balances the sweet heat beautifully.

Perfect Southwestern Pairings

  • Grilled Mexican street corn

  • Crispy sweet potato wedges
